A Kawaii Afternoon Tea
All week I'd been feeling the urge to get my bake on and then I saw this kawaii sun cake tutorial by Handmade Charlotte. It seemed like the perfect centrepiece for an afternoon tea with my favourite people.
Ok...so it turned out a little bit wonky and nowhere near as smooth and serene as Handmade Charlotte's but my friends didn't seem to mind and it disappeared in a matter of minutes.
So if you fancy a little weekend project then this is a really good one. You can go all out and bake each individual element if you like...or you can cheat and thrown together shop bought cake and icing...no-one ever has to know...
Here's how I made my version of Handmade Charlotte's Kawaii Sun Cake.
For the sponge you will need
125g/4oz butter,
125g/4oz caster sugar
2 medium eggs
125g/4oz self raising flour
Method
Heat the oven to 180C/350F/Gas 4.
Line two 18cm/7in cake tins with baking parchment
Cream the butter and the sugar together until pale.
Beat in the eggs.
Sift over the flour and fold in using a large metal spoon.
Divide the mixture between the cake tins and gently spread out with a spatula. Bake for 20-25 minutes.
Allow to stand for 5 minutes then turn the cakes onto a wire rack to cool.
Sandwich the cakes together with jam, lemon curd or whipped cream.
For the buttercream you will need
600g icing sugar, sifted
300g unsalted or salted butter, softened
Zest of one lemon
A few drops of yellow food colouring
To make the buttercream beat the icing sugar and butter together, with the lemon zest and colouring, until smooth.
Make sure your cake is super-cool (otherwise things are going to get MESSY) then smooth the yellow buttercream all over the sponge cake.
For the face you need ½ inch ball of black fondant. That bit is easy-peasy.
Finally open a packet of Pocky sticks and stick them in the cake to make the sunshine rays.
Then eat the rest of the Pocky sticks before your friends arrive. Chefs privilege ;)
